Jefferson County is a major milk producing area in NYS and across the United States. We
rank fourth in total milk production in NYS behind Wyoming, Cayuga, and St. Lawrence
Counties. We are 51st in the United States in milk production. When you look at Jefferson,
St. Lawrence, and Lewis counties together, we form one of the strongest milk producing
regions across the United States. The three counties combined produced 1.8 billion pounds
of milk in 2008, roughly 14% of the entire amount of milk produced in NYS.
